Today I will be posting a very simple recipe to do with Christmas leftovers.
You will need:
- Mashed potatoes
Quantities are up to you depending on the leftovers you have. In this case I used the leftovers of the salmon and smashed potatoes. You may replace this with any type of veggies, meat, chicken or fish.
1)Shred the salmon and placed it in a medium sized bowl.
2)Meanwhile, in a medium sauce with pan, with olive oil, cook the onion until slightly brown. Toss on bowl with salmon once cooked.
3)Add the smashed potatoes and mix.
4)Beat the whites of the eggs until stiff. I used 2 eggs. Add yolk. Once mixed, pour it into the bowl with the rest of ingredients. Add salt and pepper to taste.
5)Cook in the oven for 20 to 25 minutes at 350F or 180C .
