I don’t normally eat a lot of cauliflower, and if I do, I love to have it with béchamel and cheese. Not a very light dish, I know, but it is delicious. However, I saw this recipe the other in a friends beautiful blog called “The Green Creator” and I thought about giving it a try. It is an easy, healthy and quick way to eat cauliflower, so if you like this vegetable I think you should try this recipe (recipe borrowed from thegreencreator.com. I modified it a bit, did not have all the ingredients, so you an try it both ways:-)):
Ingredients
-1 cauliflower head, cut into florets
-1-2 teaspoon(s) dried curry
-1 teaspoon ginger
-1 teaspoon oregano
-1 teaspoon turmeric
-1 teaspoon parsley or basilicum
-Melted coconut oil and salt, for roasting (I used coconut oil but then I decided to add olive oil. For me, everything tastes better with olive oil).
Instructions
Preheat oven to 180 degrees.
Add the cut cauliflower to a baking tray and sprinkle over spices.
Drizzle with olive oil and salt. Toss it together with your fingers.
Roast in the oven for 30 to 35 minutes until golden and spicy.
