Gazpacho, is a form of tomato soup. Typical in my country, Spain. We like to have it especially during the summer because of its refreshing properties. All Gazpachos are different. Every region and family in Spain have their own version of it and they all taste different. My version is the most simple, fast and delicious way to make it.
To be able to do it you will need a blender. I have tried many but I have recently purchased this Braun hand blender, that I absolutely love and strongly recommend. You can click here to purchase it on amazon.
These are the ingredients you will need:
- 6 ripen tomatos
- One garlic peeled clove
- A slice of onion
- Half a green bel pepper
- One tablespoon of extra virgin olive oil
- A pinch of salt
- Place all the ingredients in a deep bowl. Blend at medium to high speed until all the ingredients are mixed.
- You can add a sprinkle of vinegar if desired. I usually do not include vinegar in my recipe, but it is optional.
- If you feel like the consistency is very thick, you can add 2 tablespoons of water.
- Chill before serving.
