You all know I love simple, healthy and beautiful cooking…Today I’ll share with you my delicious Zucchini Carpaccio recipe. You’ll have to write this down or print it up because you will love it!
All you will need is:
- 2 Zucchinis
- Extra Virgin Olive Oil
- One squeezed lemon
- Grated Parmesan Cheese
- Salt & Pepper
- Slice the Zucchinis- VERY thin- the thinner the better.
- Drizzle some of the squeezed lemon
- Add Olive Oil- I like Olive Oil a lot so I make sure to add a good amount.
- Add Salt & Pepper
- Top with grated Parmesan Cheese.
That’s all! Easy and Delicious!!
Secret Tip: Prepare it 30 minutes before eating for more flavor.
